Certainly experienced organisers and those at venues know that the serving of food and beverage creates opportunities to build networking between delegates, to provide pleasure, to provide a physical contrast to the cerebral activity, to improve delegate performances and to build in memorability.
THE CERTIFICATE IN CONFERENCE FOOD AND BEVERAGE (CCFB) is a qualification awarded to organisers and those working in venues who have attended the two one day London-based seminars below and who have achieved a pass mark in the 1 hour examination set. DAY ONE
Enhancing your events and networking with food, best choices and what to avoid, building in colour and texture, meats, fish, vegetables, flavours, starters, mains and desserts, food chemistry, food and drink and delegate performance from lunches, dinners and breakfasts. Current trends and the healthy eating question, creativity in conference catering, vegetarian options (catering or cop-out?) special diets and allergies, religious aspects and sensitivities, matching drink with food (wine and food tasting).
DAY TWO
Budgeting considerations on food and drink, cutting costs not corners, getting more for less, working with a chef, food service, logistics and timings (plated, buffets, bowl food and canapés) tea and coffee breaks, more on matching drinks with food, theming, health and safety issues, food poisoning – major causes and how to avoid, legalities of food and alcohol service. Examination.
The CCFB is delivered to groups of delegates as an enjoyable mix of presentation, discussion, interaction and group exercises. Delegates should note that tastings of alcoholic beverages are included and should therefore plan not to drive.
The fee for the CCFB is £825 plus VAT per delegate with a reduction to £660 plus VAT per delegate if two or more attend from the same organisation, or if delegate is an SEO member (Free sign up at www.seoevent.co.uk).
